
No Recipe summer lunches
We posted an image of this scrumptious plate on our instagram and asked if anyone wanted the recipe and we got an overwhelming "YES!". So, here is the recipe that everyone asked for and a bonus one, because we are nice like that :)
1. Summer on a plate
If you just look at the ingredients, we are sure, you will agree that they already look like they would make a great summer dish and then the final dish does look like summer on a plate, so we thought why not call it that. You can call it whatever you like :)
It is more of an assembly than a recipe, hence the no recipe...
Ingredients:
- Couscous
- Any stock cube
- Tomatoes
- Mozzarella
- Lemon
- Olives - chopped & deseeded
- Olive oil
- Extra virgin olive oil
Recipe:
Make couscous according to the instructions on the packet. However, add a stock cube and olive oil (non-virgin) to the water you use to make couscous. This will infuse a lovely, mellow flavour in the couscous. We use 1.5 cups of couscous and the same amount of water.
Depending upon how you like them, either oven roast tomatoes for 7 min at 180 deg C or leave them raw (my daughter prefers them raw)
We sometimes also add oven roasted fresh fennel to the recipe. If you decide to use it, then slice the fennel bulb into thin slices and put it in the oven for 7 -10 min at 180 deg C
Once the couscous is cooked add zest and juice of half a lemon to it and mix with a fork
Now its time for assembly
Add the tomatoes, olives, fennel (if you used it), mozzarella and extra virgin olive oil and toss everything gently.
Ta-da, summer on a plate is ready!
2. Cauliflower steaks with oven roasted potatoes
There are versions of this all over the internet, but this quick & easy recipe has become a true summer favourite in our household
Ingredients:
- A small head of cauliflower
- A small piece of Ginger
- 2 cloves of garlic
- 1 green chilli (optional) - if your chilli is as big as it is in the picture, use half of it
- About 1 tbsp of lemon juice
- Oil
- Turmeric (optional)
- Salt
- Potatoes (as a side if you like)
Recipe:
Heat the oven to 200 deg C and put a baking sheet on a baking pan
Crush or grate garlic, ginger & chilli in a bowl. Add lemon juice, oil, turmeric and salt and mix together. This is your rub.
Cut the head of cauliflower from the middle so that you get 2 thick pieces. Try to keep the pieces whole as much as possible. Place these pieces on the baking tray.
If you are looking for a side, we recommend these oven roasted potatoes which cook at the same time. Just slice small potatoes into halves or if they are bigger than into quarters and place them on the baking tray along side the cauliflower.
Spread the rub on only 1 side of the cauliflower. This will allow you to enjoy the crisp flavour of the cauliflower as well as the rub.
Sprinkle salt on the potatoes
Roast in the oven for 15 mins and then in the grill for the last 5 mins
Your cauliflower steaks with oven roasted potatoes are ready!
